Zucchinis & spices soup
More often we add potatoes in the soup, to make it more substantial or more nourishing, but a soup of 1/2 L in the evening, full of fibers and vitamins is widely enough for serving as unique dish in the supper. Using tumeric and pepper is good for your heart, so do not forget to use them together!
This recipe is vegan, dairy free, gluten free and sugar free.
|For 1 L||10 min prep||20 min cooking time|
– 2 average zucchinis
– 1 onion
– 1 tablespoon of oil plant (sunflower, sésam)
– 20 cl of soymilk
– 1 teaspoon of curry
– 1 teaspoon of turmeric
– salt & pepper
• In a frying pan with high edges, get brown the onion sliced thinly in the oil, add spices and zucchinis peeled and cut in pieces. Get brown together over a low heat during 5 min.
• Cover the zucchinis of hot water, wait that the water muds, then to lower the fire, cover with a lid and let cook during 15 min.
• At the end of cooking, put all the vegetables in a mixer (preserve the cooking water), well mix, add the soy milk, add salt & pepper, and add the cooking water according to needs(more or less liquid soup).
