Fruit Gratin

This recipe is dairy free, sigar free, oil free and and gluten free.

• For 6 Serves
• 10 min prep
• 30 minutes cooking time

– 20 cl coconut cream
– 2 eggs
– 1 tablespoon of apple sauce
– 1 tablespoon of agave syrup
– 2 peaches
– 3 large apricots
– grated coconut

• In a bowl, use a whisk to beat coconut cream, the eggs, the applesauce and the agave syrup until well blended.
• Wash, peel and cut the fruit into dices.
• Preheat oven to 200 °. In a baking dish, place the fruits and distribute the liquid preparation above. Sprinkle with shredded coconut and bake for 30 minutes (watch for baking, fruit gratin should be golden but not burned!). The gratin was excellent both hot or cold!

PS: apricots and peaches in this recipe can be replaced by other fruits such as pear, mango, raspberries, cherries, strawberries and other berries and red fruit .
